If you’ve ever seen a tray of microgreens, you might be surprised that something so small could hold so much nutrition. These tiny seedlings—harvested just days after germination—are one of the most nutrient-dense foods you can add to your diet.
At Serenity Hill Flower Farm, microgreens are one of our favorite winter crops to grow. They’re vibrant, fresh, and bursting with flavor—and they pack an incredible nutritional punch.

What Exactly Are Microgreens?
Microgreens are young vegetable and herb plants harvested when the first set of true leaves appears, usually about 7–14 days after germination. They’re more developed than sprouts but harvested much earlier than baby greens.
'Common varieties include:
Pea shoots (My favorite!)
Sunflower greens
Radish microgreens
Broccoli microgreens
Mustard greens
Kale microgreens
Each variety has its own unique flavor—from sweet and nutty to peppery and bold.
Why Microgreens Are So Nutritious
Researchers have discovered that microgreens can contain 4–40 times more nutrients than their mature counterparts (WOWSA!) . Because they are harvested at such a young stage, they concentrate vitamins, minerals, and beneficial plant compounds.
Here are just a few of the nutritional highlights:
Rich in Vitamins: Many microgreens are loaded with vitamins A, C, E, and K—essential nutrients that support immune health, skin health, and bone strength.
Powerful Antioxidants: Microgreens contain high levels of antioxidants that help reduce inflammation and protect your cells from damage.
Packed with Minerals: Iron, magnesium, potassium, and zinc are often found in higher concentrations in microgreens than in fully grown vegetables.
Supports Heart Health: Some varieties, such as broccoli microgreens, contain compounds that may help reduce cholesterol and support cardiovascular health.
Easy Ways to Use Microgreens
The best part about microgreens is how easy they are to incorporate into your meals. Their fresh flavor and tender texture make them incredibly versatile.
Try adding them to:
🥗 Salads for extra nutrition and color
🥪 Sandwiches and wraps
🍳 Eggs, omelets, or avocado toast
🍝 Pasta and grain bowls
🍲 Soups just before serving
🥩 As a fresh garnish on any dish
They instantly elevate both the flavor and the presentation of a meal.
